I have worked extensively creating Win10 and Win11 multi app KIOSKS for MNIT. Traditional KIOSK assigned access implementation can create a kioskuser0 for autologin. For that usage, the account is created by KIOSK provisioning and does not have to already exist. Please consider implementing this standard assigned access approach.
Also, two other points:
Traditional multi app KIOSKS do not auto open all allowed applications on boot, only the applications you supply with auto open arguments. Please consider allowing apps but not auto opening ALL of them.
If you choose to use an auto logon user account, you should be able to login to that machine with a different account without KIOSK setting being applied to that user as well.
